Lemon slice processing steps:
- Select high-quality lemon fruit, carefully clean the lemon fruit, there are salt water cleaning method, soda water cleaning method or ultrasonic cleaning method, etc. The main purpose is to clean and remove pesticide residues or wax.
- Cut the fruit into slices of about 4mm by hand or with a lemon slicer. Note that the thickness should be uniform, and the error should not exceed ±1mm! In addition, the lemon seeds should also be removed, so as not to affect the drying effect and the taste of the lemon slices.
- Transfer the lemon slices that have been air-dried for a day to a high-temperature air-energy lemon drying room, set the dryer temperature to a low temperature range of 40-50 °C, and the moisture of the lemon slices will slowly evaporate and drain during the low-temperature drying process.
